Yay! For my 500th post!!!!
Our local deli serves the cucumber and tomato salad that inspired this cucumber salad recipe. Although I can never actually taste the cucumbers or tomatoes in theirs, since it’s drenched in bottled Italian dressing. Since it uses two veggies that are ripe in the garden right now, it was the perfect choice for us!
Although Pumpkin’s mostly outgrown his sous chef stage, he mixed together the dressing, while I sliced the veggies. 🙂
Ingredients:
2 cucumbers, 8 roma tomatoes, 1/2 c. fresh grated cheese (I use pecorino romano), 1/3 c. white vinegar, 3 Tbsp. olive oil, 2 Tbsp. sugar, 1 Tbsp. minced garlic, 1 Tbsp. parsley, 2 tsp. marjoram, 2 tsp. basil, 2 tsp. oregano, 1 tsp. sage, fresh ground sea salt, fresh cracked black pepper
Directions:
Slice cucumbers and roma tomatoes and set aside. Mix together remaining ingredients. Pour dressing over veggies and toss. Serve chilled.

Oh, I’ve seen this salad before, although my family’s section of Italy probably wouldn’t have included the oregano; the marjoram would have been enough. And why do deli’s insist on dumping all of that dressing on their salads? It makes them so unappealing. Yours here, though, looks to be dressed perfectly and looks delicious..

Our tomatoes are just starting, harvested a few roma tomatoes and cherry tomatoes… Can’t wait for the rest!

This looks delicious! That bruschetta salad sounds fantastic as well. Our garden has officially given up in the heat and I miss it! Only another month or two though until we can start on the fall garden.
