Pomegranate Cider Mimosas

These delicious pomegranate cider mimosas have become my favorite brunch mimosa for autumn. This year, we’ve been blessed with temperatures nice enough for a Sunday brunch al fresco.

Ingredients:
hard cider, pomegranate liqueur, pomegranate juice, pomegranate seeds

Directions:
Pour cider, liqueur, and juice into a glass.Use amounts according to preference. Garnish with fresh pomegranate seeds.

Just add a tasty brunch menu and some great friends…

Amazing Autumn

Hello November…

It seems like that last few years, autumn disappeared before it even began. Leaves would start to change color only to be knocked down prematurely by heavy wind and rain.

This year, autumn has been amazing… bright colors, warm temperatures, and incredible weekends.

I’m enjoying an extended leaf peeping season between weekends at the cabin and weeks at home…

Hello Again

This summer, I saw an old friend for the first time in over 16 years.

“You haven’t been posting on your blog. How are you?” he greeted.

My family may have mentioned the same thing a million times since there were only a scant amount of postings in 2015 and only crickets in 2016.

Where have I been? 
In the past two years…
We’ve lost many loved ones.
We’ve had several changes at work.
Pumpkin became a teenager and started high school so we’re constantly on the road to and from sporting events.
We’ve been going crazy with DIY projects that I haven’t yet had time to post.

But…

I will try to be better about posting…

I will try to make it a habit again…

Holiday Chicken Salad

Spiced pecans and dried cranberries are two of my favorite seasonal flavors. When mixed together, they give a nice holiday spin to a classic recipe making it the perfect dish for a holiday luncheon.HolidayChickenSalad

Ingredients:

3 boneless skinless chicken breasts, 6 stalks of celery, 4 shallots, 1 c. dried cranberries, 1 c. spiced pecans, mayonnaise

Directions:
Poach chicken breasts and cool completely. Chop celery, shallots, cranberries, and pecans. Shred or cube chicken. Toss ingredients together, using only enough mayonnaise to wet the mixture. Chill for about 6 hours before serving. Mix again before serving.

*Serve on a fresh baked croissant or bed of mixed greens.

About My Hiatus

Besides monthly challenge posts, my readers noticed that I haven’t been posting. This hiatus was longer than any previous one. In January, we started a major home project. In February, it stalled as I got really sick. At the beginning on March we found out I had pneumonia. Just as I was beginning to recover, my maternal grandmother (my last living grandmother) passed away. She had another stroke (in January) and her body didn’t recuperate. That weekend, we found out that Hubster’s paternal grandmother (his last living grandmother) had cancer and it had already spread throughout her body. We had a a few weeks of quality time with her before she passed away. So far, 2015 has been a difficult year and we’re ready for that to change.

My grandmother, Nanny Moon, loved animals and gardening (two things we have in common). Hubster’s grandmother, (Gram to Hubster, Meme to Pumpkin) loved being with her family and cooking (two things we have in common).
