Today’s cucumber salad is really a glorified (or chunky) version of tzatziki! How could you not love that? Yum!
Ingredients:
3-4 cucumbers, 2 c. Greek yogurt (or 1 1/3 c. plain yogurt and 1/3 c. sour cream), 3 Tbsp. mince garlic, 1 Tbsp. olive oil, 1 Tbsp. fresh dill weed, 1 Tbsp. lemon juice, fresh ground sea salt
Directions:
Cut into chunks and sprinkle with salt. Mix together remaining ingredients. Toss in cucumbers and mix until well coated. Keep chilled and allow to set for at least 4 hours.
*Serve with chicken souvlaki skewers as a side dish, or with wedges of pita as a chunky dip.
