BBQ and picnic season is in full swing, and that means tasty potlucks, scorching hot weather and refreshing drinks. If you are sick of bringing the same ol’ side dish, try something new! Cucumbers are cool and refreshing on a steamy day. This week I’ll share all my variations of cucumber salad with you.
Dad’s Pickled Cucumber Salad
Ingredients:
3-4 cucumbers, 1/2 large red onion, 1 c. sugar, 1 c. white vinegar, 1 c. water, fresh ground sea salt, fresh cracked black pepper
Directions:
Peel alternating stripes on cucumbers. Thinly slice cucumber and onion, place in a bowl. Sprinkle with salt & pepper. Pour sugar, vinegar and water over cucumbers. Stir until well mixed. Keep chilled and allow to rest for at least 12 hours before serving.
