Back home there’s this pizzeria and it makes the most delicious chicken sandwich I’ve ever had. Part of what makes them so fantastic, are the local Amoroso rolls. Unfortunately, I can’t get them here. So I do my best with what I’ve got. I know this is easy and you don’t really need a recipe, but I just wanted to share my hometown favorite.
Ingredients:
rolls, chicken breasts, marinade (I like to use Italian or balsamic vinegar), baby spinach, roasted red peppers, provolone cheese
Directions:
Use chicken into small bite size pieces and marinate overnight. Cook chicken in a medium-sized frying pan over medium heat. Once chicken is finished, add spinach and sauté. When chicken is wilted, add roasted red peppers to warm. Top with provolone and heat until melted. Stuff the yumminess into a roll and enjoy.
Is there a sandwich that you just love?
That’s my kind of sandwich! Looks great.
Thanks Rufus!
Mmmm looks delicious! I wish I had one now for breakfast. Thanks for sharing! I might try to make this today.
Thanks! Enjoy!
Suddenly, the cheeseburger on my grill seems unappetizing, relatively speaking. The spinach was a great idea!
Haha, thanks, but I just copied one of my favs.
Yum!
Absolutely!
“Amoroso plays the leading roll!”
🙂 Wish we got them here!

I hope you had a good dinner Casey!
You really don’t need a recipe for this.. but this chicken spinach and pepper sandwich looks amazing. This reminds me of the Italian sausage with peppers and onion specialty sandwich thats famous here. I have to try this out.
Just a taste of home 🙂
Looks tasty. And beautiful!
Thanks Sherri!
Thanks Sherri!!!
OMG the perfect sandwich! Chicken with vegetables and cheese is my favorite 🙂
How can you go wrong with that combo?
