My 300th Post!

I feel like I should either be celebrating or writing something epic… But in reality, today’s post is short and sweet. Last night, we were busy putting together Hubster’s new elliptical and it looks like it’s going to take us two nights… Ah, quality time… After being exhausted I needed to whip up a snack (I also made these New Year’s Eve).

My picky Hubster was popping these into his mouth, that is until he found out the cheese was goat cheese. Goat cheese can be really pungent, but the smoky bacon and sweet peppers balance out the flavors. Funny how you can love something until you find out what it is. 🙂

Goat Cheese Stuffed Peppers Ingredients:
goat cheese, mini sweet peppers, crumbled bacon, garlic powder, fresh parsley, fresh cracked black pepper

Goat Cheese Stuffed Peppers Directions:
Cut top from peppers and remove any seeds. Carefully mash together cheese, bacon, garlic and parsley. Using pastry bag or icing press, stuff peppers and serve cold.

Pasta alla Carbonarra

10 minutes meal
Traditionally served with spaghetti or fettuccine, I use what ever pasta is on hand (angel hair cooks fast). The sauce is traditionally made with a raw egg and not cream, but I can’t seem to stomach that idea. My Carbonarra is sounding more American than it is Italian. However, I didn’t forget one crucial ingredient, (that most Americans omit) black pepper… let me rephrase that, lots and lots of black pepper. Also, I had to omit all the American additions that I feel take away from the integrity of the dish, peas, mushrooms, etc… Okay, so I’m trapped somewhere between American carbonarra and true Italian carbonarra… This is how Hubster and I enjoy pasta alla carbonarra.

Pasta alla Carbonarra

Ingredients:
package of turkey bacon, 1 c. heavy cream, 1/2 c. chardonnay, 1/2 c. grated pecorino romano, 1 Tsp. minced garlic, fresh chopped parsley to garnish, generous amounts of fresh crackled black pepper, freshly ground sea salt, paprika

Directions:
Cook pasta according to package directions. Tear bacon into small pieces, place in a medium saucepan and heat until crisp. Add garlic and mix. Add cream, wine, cheese, pepper, parsley and salt. Simmer over low heat, stir frequently. Once pasta is drained, toss into carbonarra sauce and coat thoroughly. Transfer pasta into bowls, top with another pinch of fresh chopped parsley, fresh grated pecorino romano and just a hint of paprika. Enjoy!

This is the perfect addition to lunch or light fare dinner on a crisp fall day. Delicious flavors and wonderful textures all harmonizing in one bowl.

For each salad you need:

Ingredients:
2 c. spring mix, 1 Granny Smith apple, 1 Tbs. lemon juice, 1/2 c. pomegranate seeds, 2 Tbs. roast (with nutmeg) butternut squash seeds , 2 Tbsp. crumbled bleu cheese, 4 pieces crumbled turkey bacon, 1 Tbs. ginger sesame seed dressing

Directions:
Place spring mix on salad plate or bowl. Core and cut apple into chunks, dip in lemon juice. Layer ingredients on top of spring mix, drizzle with dressing and serve.

Hubster loves his eggs for breakfast and he’s over the Cheerios and oatmeal I give him to keep his cholesterol love (He doesn’t have a cholesterol problem, I just worry with all the meat, eggs and ice cream he eats). I wanted to make a delicious breakfast, that was also a bit healthier.

Egg White Omelet
I whisked together 8 egg whites, 1 tsp. vinegar (to help make the eggs fluffy), 1/2 Tbsp. minced onions, salt and pepper. Pour into hot pan and cook over medium heat until eggs begin to set. Add the cheese, meat and vegetables of your choice on half of the eggs. Fold omelet in half and continue to heat to melt the cheese. Remove from heat, transfer to a plate and serve.

This time I used turkey bacon, tomatoes and cheddar cheese. Another favorite of mine in spinach and Feta cheese.
