Hubster is working late this week, so that means I can indulge my palette… time for meatless dishes and seafood…

Red Cabbage Salad

Red Cabbage Salad

Red Cabbage Salad Ingredients:
shredded red cabbage, edamame, green apples, shredded carrots, sesame seeds, lemon juice, rice wine vinegar, honey, sesame oil, fresh ground sea salt, fresh cracked pepper (I used a four-color peppercorn blend)

Red Cabbage Salad Directions:
Add edamame, water and salt to saucepan and bring to boil. Simmer over medium heat for a few minutes. Remove pan from heat, and allow to cool slightly. Remove beans from pods and set aside to cool. Chop, cut or shred green apples, immediately place into lemon juice. Whisk together sesame seeds, rice wine vinegar, sesame seed oil, honey, salt & pepper. Toss together carrots, cabbage and edamame. Pour vinaigrette over cabbage salad and mix. Let rest & chill. Toss in apples just before serving. Garnish with sesame seeds.

*Serve this red cabbage salad as a side dish at a BBQ or picnic.

Non-veggie suggestion: Place  layer of the red cabbage salad on plate. and add grilled ginger shrimp or chicken.

I usually make my salmon with a lemon marinade and creamy dill sauce over top. Last Friday, my mother mentioned salmon and I’ve craved it ever since. On Wednesday I spotted this recipe on Weelicious after I made dinner, so I planned to make it for dinner on Thursday. Then Thursday night ended up being Girl’s Night with some work friends, so I put off making it another day. Tonight, I finally got to indulge in my salmon.

Maple Ginger Salmon with Edamame & Rice

Maple Ginger Salmon with Edamame & Rice

Maple Ginger Soy Salmon Ingredients:
2 salmon filets, 2 Tbsp. Bragg’s Liquid Aminos, 2 Tbsp. maple syrup, 1 Tbsp. rice vinegar, 1 Tbsp. fresh grated ginger

Maple Ginger Soy Salmon Directions:
Whisk together Bragg’s, syrup, vinegar and ginger. Pour marinade over salmon and let sit for 30  minutes. Bake, broil, pan-sear or grill your salmon to completion. I like to remove the skin before serving. Serve hot.

Pan-sear about 3 minutes eat side, bake 450ºF covered for about 9 minutes, broil high for about 7 minutes, grill 3 minutes each side…

I looks like Catherine served her salmon with soy or lima beans and brown rice, the pairing was simple and sweet for her toddlers. For my consumption, I felt the need to turn it up a notch. I served my salmon over a bed brown rice drizzle with Bragg’s Liquid Aminos and edamame sprinkled with crushed red pepper flakes. Yum!

What was on your plate tonight?

Hubster is stuck in traffic on the interstate, and I’m too hungry to wait. So tonight I quickly whipped up shrimp for myself, while the chicken is in the oven for him.

Shrimp & Asparagus Linguini

Shrimp & Asparagus Linguini

Ingredients:
1 lb. shrimp, 1 bunch of asparagus, 1 minced shallot, 23 Tbsp. butter, 1/4 c. Tbsp. lemon juice, 1 lb. linguini, fresh cracked black pepper, fresh ground sea salt

Directions:
Cook and drain linguini according to package directions. Cut asparagus into smaller pieces and set aside. Peel and devein shrimp. Melt butter in sauté pan and brown shallots. Add shrimp and asparagus and cook until shrimp is pink and asparagus is tender. Add lemon juice, salt and pepper and allow sauce to thicken a bit. Serve over hot linguini and garnish with fresh grated Pecorino Romano.

*I toss the linguini in the pan, to coat in the sauce, before plating.

*This is excellent served with homemade linguine or fettuccine.

UPDATE:
My mom was able to come home from the hospital this afternoon! She’s not out of the woods yet, but is doing much better. I want to thank my friends and readers for all the positive thoughts and prayers you’ve been sending our way!

We’re half-way through the week, I’m hoping the second half will be much better than last week!

What positive thoughts and prayers do you need sent your way?

I was lucky enough to inherit some extra lobster, so I made myself some lobster penne for dinner. While Hubster was working late, I made this for myself. The recipe below is for one serving.

Lobster Penne

Lobster Penne

Ingredients:
1 lobster tail (or lobster claws), button, minced shallots, 1 Tbsp. of chopped tarragon, 1/4 lb. dry penne pasta, 1/8 c. champagne, 9 asparagus tips, 1/8 c. sun-dried tomatoes, percorino-romano cheese

Directions:
Prepare lobster tail how you prefer; boiled, steamed or grilled are all great. Cut into large chunks and set aside. Bring a pot of water to a boil and cook penne according to package directions. In a small sauté pan, melt butter and brown shallots. Add lobster, tarragon and champagne and allow to simmer. Toss in sun-dried tomatoes and asparagus. Pour lobster and sauce over a bowl full of hot pasta. Sprinkle with freshly grated cheese.

Do you ever dine solo? What do you make?

Every restaurant has a different variation of this recipe, some appease my palate more than others. Hubster doesn’t like  seafood or soup and he’s avoiding creamy foods now, so this was the perfect recipe for me to indulge myself. Afterall, I had some leftover shrimp from New Year’s Eve and some leftover champagne (which I used in place of the white wine). So New Year’s Day, I whipped up a batch, here’s my version of Shrimp & Corn Chowder.

Shrimp & Corn Chowder

Shrimp & Corn Chowder

Ingredients:
1/2 lb. shrimp, 2 Tbs. butter, 1 Tbsp. Old Bay seasoning, 1/4 tsp. celery seed, 1 chopped red bell pepper, 10 oz. sweet corn kernels, 4 c. soup stock, 1 c. white wine, 2 c. heavy cream, 1 tsp. fresh chopped parsley, rivels, 1 Tbsp. cornstarch

Directions:
Melt butter in soup pot over medium heat. Saute shrimp and add Old Bay, cook until done. Remove shrimp from pot and add chopped peppers, sauté until softened. Add white wine and simmer. Add stock and corn, bring to a boil. Return shrimp to pot (you can leave them whole, but I prefer them chopped). Add cream and stir throughly. Drop in rivels, boil for 5 minutes stirring constantly. Mix 2 Tbsp. of the broth with 1 Tbsp. of cornstarch and then return mixture to soup. Reduce heat and simmer until thickened.

What warms you up on a cold winter night?
