I’ve wanted to use cast iron skillets in my kitchen for a long time. However, I was hesitant of quality and only wanted USA made skillets. Cast iron cooking has been pushed further down the priority list. Luckily, I have a cousin who is a bit of a collector and has generously given me several skillets. Thanks again, R!

Herbes de Provence Chicken

Herbes de Provence Chicken

 

Ingredients:
4 boneless skinless chicken breasts, 3 Tbsp. extra virgin olive oil, 2 shallots (minced, 1 Tbsp. minced garlic, 2 Tbsp. Herbes de Provence, 1 tsp. garlic powder, 1 tsp. fresh ground white pepper, 1 Tbsp. fresh ground Himalayan sea salt

Directions:
Cut chicken breasts in half and pound flat. Mix together 2 Tbsp. olive oil, garlic powder, Herbes de Provence, salt, and pepper. Massage seasoning into chicken breasts and set aside. In a cast iron skillet, warm remaining olive oil, and sauté minced garlic and shallots in a cast iron skillet. Add chicken to skillet and cook until no longer pink and juices run clear.

*Serve with Herbes de Provence Roasted Vegetables or sugar snap peas.

Yellow Pineapple Curry

In November, my book club met at a local Thai restaurant. It was the first time I had dined at that particular Thai restaurant. I loved their pineapple yellow curry and was surprised that they used red curry paste instead of yellow curry paste. I craved more pineapple yellow curry, but I was out of red curry paste (it’s not something that my small town grocery store or Amish shops carry). When visiting my parents over Christmas break, I went to the local Asian market and picked up red curry paste. Yay!

Pineapple Yellow Curry

Ingredients:
1 Tbsp. coconut oil, 3-5 Tbsp. red curry paste (to taste), 1 Tbsp. yellow curry powder, 1 can coconut milk, 1 c. water, 1 chicken breast (sliced into small pieces), 1 tsp. fish sauce (optional), 1 c. fresh pineapple (cut into small slices),  1/2 c. bamboo shoots, 1 c. broccoli florets, 1/2 yellow bell pepper sliced, 1/2 red bell pepper sliced, 1 carrot (slice or chopped)

Directions:
In a wok, sauté coconut oil, curry paste, and curry powder. Slowly add coconut milk, water, and fish sauce and bring to a slow boil. Add chicken pieces. A few minutes before chicken is down, add the remaining ingredients. Simmer until done.

Serve: with steamed jasmine rice & hot ginger tea
Garnish: lemongrass or Thai basil
Vegetarian/Vegan: Omit fish sauce and substitute tofu in place of the chicken.

Now that I have red curry paste in my pantry again, I can’t wait to make this dish again!

Feta Dill Dip

We’re 2/3 the way through 2014, and I have yet to post a recipe! Yikes! Since it’s quick and easy, I often make this tasty dip. Last weekend, I made it for a party, but went a little too crazy when adding the dill. fetadilldip

Ingredients:
1 c. Feta, 1/2 c. milk (or 1/2 c. Greek yogurt), 1 Tbsp. dill weed, 1 clove garlic (minced), 1 lemon, fresh cracked black pepper, parsley

Directions:
Zest and juice lemon and set aside. If you like your dip to be chunky, mix all remaining ingredients together. Blend it for a smooth dip. Mix in zest and lemon juice (to taste). Garnish & serve.

Garnishes:
kalamata olives, roasted red peppers, parsley, dill, capers, etc…

Serve With:
pita chips, pita wedges, cucumber slice, bell peppers, carrot sticks

DIP TIP: When taking the dip to a party, I transfer the dip into the original plastic feta container for easy transport.

On the third day of Christmas Young Wifey shared with me: Nanny’s Florida’s pecan sugar cookies, shortbread squares, and chippers recipes.

Nanny Florida’s Pecan Sugar Cookies

Ingredients: 
1 c. butter, 1 3/4 c. confectioners’ sugar, 1 egg, 1 tsp. vanilla, 1/4 tsp. almond extract, 1 tsp. baking soda, 1 tsp. cream of tartar, 1 c. chopped pecans

Directions:
Preheat oven to 400°F. Cream together butter and sugar, and beat until fluffy. Blend in eggs and extracts. Mix the dry ingredients together and add to wet ingredients. Mix throughly. Stir in pecans. Drop by teaspoonfuls onto ungreased baking sheet. Bake for 8 to 10 minutes, or until barely colored. Allow to cook slightly before moving them to a cooling rack.

On the second day of Christmas, Young Wifey shared with me: Nanny’s Florida’s shortbread and chippers recipes.

Nanny Florida’s Shortbread Squares

Ingredients:
1 lb. butter, 1 1/2 c. sugar, 2 egg yolks, 5 c. unsifted flour

Directions:
Preheat oven 325°F. Cream butter until soft and smooth, gradually beat in sugar, until light and fluffy. Beat in egg yolks, Gradually add flour, working it in until throughly blended. Knead in the bowl for 1 minute. Divide and pat dough into four 9″x13″x1/2″ baking pans. The dough should be 1/4 inch thick. Cut each pan of dough into 24 squares. Prick with fork (or use your favorite attachment on your pastry wheel to create fancy patterns). Bake for 20-30 minutes. Do not let brown, they should be pale yellow. Cut into squares again while hot, cool.

Nanny Florida’s Chippers

Usually, when I make chocolate chip cookies (even a double batch), Hubster & Pumpkin chow down and make them all disappear. They love Nanny Florida’s Chippers recipe, but surprisingly it only takes a few chippers to fill the cookie void in their bellies. She would’ve been so thrilled! ♥

Ingredients:
1 egg, 2/3 c. butter, 1 3/4 c. flour, 1 tsp. baking powder, 1 tsp. vanilla, 1/2 c. chopped nuts, 1 c. semisweet chocolate pieces (I use mini chocolate chips)

Directions:
Preheat oven to 375°F. Mix together all ingredients throughly. Press dough into 13″x9″x2″ pan. Bake 20 to 25 minutes. Cut into bars while still warm.

*Can be drizzle with chocolate glaze or frosting as desired.
*Make about 42 bars.

We like to make these with walnuts, macadamia nuts, pecans, and/or cashews!
