Got breakfast?
Back to school is the perfect time to play around with quick grab and go options. And breakfast rolls have so many possibilities, it’s difficult to get bored. Any combination of meat, cheese, veggies, and condiments will work. You can prep these ahead of time and refrigerate or freeze. Simply microwave in the morning and enjoy.

Sausage Roll Ingredients:
puff pastry (or other quick baking dough), turkey breakfast sausage, cheddar cheese, Dijon mustard

Ham Roll Ingredients:
puff pastry, turkey ham, swiss cheese, Dijon mustard

Pancake Roll Ingredients:
puff pastry, turkey sausage, maple syrup

Monte Cristo Roll Ingredients:
puff pastry, turkey ham, smoked turkey, swiss cheese, provolone, maple syrup

Apple Roll Ingredients:
puff pastry, apple slices, cheddar cheese

Banana Roll Ingredient:
puff pastry, banana, peanut butter

Bacon & Egg Roll Ingredients:
puff pastry, cooked turkey bacon, scrambled eggs, any cheese or condiment

Berry Roll Ingredients:
puff pastry, red raspberries, dark chocolate chips (just a few)

Breakfast Roll Directions:
Cut the dough into rectangles, layer with condiment, cheese and meat. Roll dough up and press closed. Place seam side down and bake about 375°F for about 10 minutes, or refer to dough directions.

Cheese danishes are delicious… shaped like pinwheels they’re beautiful and delicious.

Pinwheel Cheese Danish

Cheese Danish Ingredients:
1 batch of danish dough cut into squares (or puff pastry), 1 – 8oz. pkg. cream cheese, 1/2 Tbsp. lemon zest, 1/2 c. sugar, 1 Tbsp almond extract, 1/8 tsp. fresh ground sea salt, 1 egg, 1 Tbsp. water, additional sugar for sprinkling

Cheese Danish Directions:
Preheat oven to 375ºF. Beat together egg and water, set aside. Cream together cheese, sugar, zest, extract and salt. Keep chilled. Cut square from all 4 corner towards center, leaving middle of square in tack. Transfer squares to greased baking tray. Pull left side of each corner (or right side of each triangle) into middle and press down. Press dough down in middle to create a pocket and fill with cheese mixture. Brush egg mixtures over dough and lightly sprinkle with sugar. Bake for about 15 minutes (baking time and temperatures will really vary depending on type of dough you use). Serve warm or cold.

Savory Chicken Pasties

During our holiday in Scotland, we loved walking into a bakery and walking out with savory chicken pasties…  I decided to create the same yummy in the belly, easy to eat experience for dinner (think of it as a gourmet Hot Pocket).

Ingredients:
Phyllo sheets, Chicken breasts, sour cream, Dijon mustard, pears, swiss cheese, olive oil (or melted butter)

Directions:
Cook chicken breast in frying pan with EVOO (use any herbs, spices you like for your chicken). Remove from pan, allow to cool and pat dry. Brush olive oil on each layer of Phyllo. Mix together Dijon mustard and sour cream together and set aside. Layer 1 slice of cheese, pears, cream (thin layer), chicken, cream and second slice of cheese on the left side of the Phyllo sheets and fold over. Brush with olive oil and press sides closed. Bake at 350°F for 20 minutes.

Yum, yum! I think this would be very plain without the pears, Hubster thinks it would be very plain without the ham. Next time I am going to try bleu cheese with my pears and chicken instead of the swiss.

*Hubster’s chicken breast was wrapped in a thin slice of ham before layering his ingredients in his pasty. Sort of chicken cordon bleu…

*You may prefer the taste of the butter over the olive oil.

*Of course you can add any combination of meat, cheese and veggies to make these delicious pasties. What combinations are you going to try?
