Fifth Day of Christmas – Gingerbread Fudge

On the fifth day of Christmas YoungWifey shared with me, her gingerbread fudge recipe, peppermint bark, dark chocolate peanut butter balls, cracked glass candy, and her peanut butter fudge recipe…

Ingredients: 1 c. sugar, 1 c. brown sugar, 1/4 c, molasses, 1/4 c. light corn syrup, 3/4 evaporated milk, 1 c. mini dark chocolate chips, 2 Tbs. butter, 1 tsp. vanilla, 1 tsp. cinnamon, 1 tsp. nutmeg, 1/2 tsp. ginger, pinch of salt

Directions: Combine the first five ingredients and salt in a saucepan over medium heat. Stir until sugar is dissolved. Add chocolate chips and stir until mostly melted. Continue to cook until candy thermometer read 230°F. Remove from heat and add butter and spices, stir until it holds its shape. Pour fudge onto a wax paper lined 9 x 9 pan, tap pan on counter to level fudge. Let fudge cool, then cut into squares.

First Day of Christmas – Peanut Butter Fudge

On the first day of Christmas YoungWifey shared with me, her peanut butter fudge recipe.

For the twelve days of Christmas, I’m going to share 12 sweets recipes that are great for gift giving this holiday season. I know that the twelve days of Christmas actually start on Dec. 25th and run through Three Kings Day on Jan. 6th, however sharing the recipes earlier means it helps those of you making Christmas or Holiday Candy.

Peanut-Butter is Hubster’s favorite ingredient to include in dessert, so I chose this recipe as the first to share.

Peanut Butter Fudge

Ingredients: 2 c. sugar, 1 c. heavy cream, 1/2 stick of butter, 1 c. peanut butter, 1 tsp. vanilla, pinch of salt.

Directions: In a saucepan, mix sugar, cream, butter and salt together. Boil, stirring frequently. Drop a spoonful into cool water, if it forms a soft ball, it is ready. Remove from heat and stir in peanut butter and vanilla. Mix until creamy, pour into greased 9 x 9 pan. Cool before cutting into squares.

*This is also a good way to top brownies, just pour peanut butter fudge over top of freshly baked brownies, allow to cool before serving.

* Before cool, sprinkle mini chocolate chips, mini Reese’s Pieces, or pretzel pieces on top of fudge, press down and allow to cool.

*Garnish each square with a dollop of melted chocolate.

I made a double batch because I like it o look extra tall. I’ll take nicer photos once It’s set.
