Cheddar Ale Eggs

Our family’s version of Welsh Rarebit is one of our favorite breakfast dishes. Hubster and Pumpkin enjoy theirs with fried eggs, but I prefer mine with ale poached eggs.Cheddar Ale Eggs

Cheddar Ale Sauce
Ingredients: 1 c. of ale, 2 c. shredded cheddar cheese, 1 Tbsp. prepared brown mustard, 1 tsp. garlic powder, fresh ground sea salt, fresh cracked black pepper

Directions:
Add ale to small sauce pan and bring to a boil. Reduce heat to low and add remaining ingredients. Whisk together until cheese is melted and sauce is smooth.

Cheddar Ale Eggs:
Ingredients: ale poached eggs or fried eggs, English muffins, cheddar ale sauce, turkey ham, smoked paprika

Directions:
Slice turkey ham and pan fry until warm. Prepare eggs to your preference. Toast English muffins. Layer the ingredients and top with the warm cheddar ale sauce. Garnish with smoked paprika.

*Serve with ale breakfast potatoes.

Today is Ground Hog’s Day…. will we have 6 more weeks of Winter?  Or will Spring come early?

I whipped up breakfast, while I was waiting for Punxsutawney Phil to make his prognostication. These Grilled Breakfast Wraps can be made with what ever ingredients you like.

Grilled Breakfast Wraps

Ingredients:
4 whole-wheat flour tortillas, 5 eggs, splash of milk, fresh ground sea salt, fresh cracked black pepper, 5 slices of turkey bacon, fresh salsa, Mexican blend shredded cheese, taco sauce

Directions:
Beat eggs, milk, salt and pepper together. Chop bacon and toss into egg mixture. Pour into pan and scramble eggs over medium heat. Warm flour tortillas briefly in oven. Layer eggs, cheese and fresh salsa in wrap. Fold side in, bottom up and top down. Place seam side down on hot griddle. Grill for a few minutes and flip. Serve hot with taco sauce for dipping.

Whether making this easy dish for an on-the-go breakfast, a hearty brunch or a breakfast for dinner night, it’s sure to please those around you.

Brunch Eggs

This post is a little late, but after finally sleeping in on Sunday I made one of my favorite brunch dishes. This was also the first brunch I made for Hubster about 5 years ago, I served it with my brunch salad and he thought I was crazy. Now, he loves the brunch potatoes I make with it and eats the salad without fuss.

Ingredients:
4 english muffins or bread, olive oil, 8 fresh basil leaves, 2 c. diced tomatoes, 4 eggs, 8 slices of provolone

Directions:
Coat four small Pyrex ramekins with olive oil. Mix fresh basil with diced tomatoes and divide mixture into each ramekin. Make a small well in the tomato mixture and then crack an egg into each well. Bake the ramekins until eggs are done to your preference (350°F for about 20 minutes). Turn off the oven, top each ramekin with a slice or two of provolone cheese, and place back in the oven for two minutes. Right before serving, flip ramekin over a toasted pumpernickel bread. Garnish with a fresh basil leaf and a sprinkle of grated provolone.

*Usually I serve this on english muffins, however I had a few slices of tasty pumpernickel.
