Cheddar Ale Eggs

Our family’s version of Welsh Rarebit is one of our favorite breakfast dishes. Hubster and Pumpkin enjoy theirs with fried eggs, but I prefer mine with ale poached eggs.Cheddar Ale Eggs

Cheddar Ale Sauce
Ingredients: 1 c. of ale, 2 c. shredded cheddar cheese, 1 Tbsp. prepared brown mustard, 1 tsp. garlic powder, fresh ground sea salt, fresh cracked black pepper

Directions:
Add ale to small sauce pan and bring to a boil. Reduce heat to low and add remaining ingredients. Whisk together until cheese is melted and sauce is smooth.

Cheddar Ale Eggs:
Ingredients: ale poached eggs or fried eggs, English muffins, cheddar ale sauce, turkey ham, smoked paprika

Directions:
Slice turkey ham and pan fry until warm. Prepare eggs to your preference. Toast English muffins. Layer the ingredients and top with the warm cheddar ale sauce. Garnish with smoked paprika.

*Serve with ale breakfast potatoes.

This is a terrific simple snack or even meal. I had a little puff pastry left over from yesterday’s tart, so I whipped up this tasty bite. This was so simple, I’ll have to make sure I always make a larger batch of puff pastry. Perfect for a Monday.

Cheddar, Chicken & Spinach Puff Pastry

Cheddar, Chicken & Spinach Puff Pastry

Ingredients:
puff pastry, 2 grilled chicken breasts (cubed), fresh spinach, cheddar cheese

Directions:
Preheat oven to 425°F. Place puff pastry on greased baking tray. Arrange chicken on bottom, cover with spinach and top with cheddar. Pull sides of  puff pastry up an inch or so over the filling. Bake for 10-15 minutes, until cheese is melted and pastry is golden brown.

*Serve with warm tomato sauce.

Ham & Three Cheese Crustless Quiche

Saturday was sunny and warm outside. Sunday morning was a rainy grey morning and I was putting off posting. It poured all day… In the evening I was finally I was ready and my internet was down. It Must have been the freezing rainwater and sudden snowstorm… Mother Nature is very confused.

I’ve shared my crustless quiche recipe before, when my camera was broke. Now that I made it again, I decided to take a picture to share. This time I used turkey ham and a combination of cheese; extra sharp cheddar, sharp cheddar (white) and sharp cheddar (orange). I substituted shallots instead of the minced onions. It was the perfect breakfast on this snowy morning.

Crêpes… I love crêpes. I always keep a stack of them in the freezer. So tonight, when I pulled them out to thaw for dinner, I looked in the freezer to see what I could throw into them. Chicken breasts, garbanzo beans, summer sun ripened tomatoes I had diced and frozen… mmm. Then I looked in the fridge and pulled out some leftover diced green chilies, fresh cilantro, heavy cream and cheddar cheese…

Tequila Chicken Crêpes

Ingredients:
6 -8 crêpes, 4 boneless skinless chicken breasts, 2 Tbsp. olive oil, 2 Tbsp. minced onions, 1/4 tequila, 1 c. diced green chilies, 2 c. diced tomatoes, 2 c. garbanzo beans, 1 Tbsp. fresh chopped cilantro, 2 c. cheddar cheese, 1 c. heavy cream

Directions:
Warm oil in skillet and add onions. Brown chicken and cook until no longer pink on inside. Add tequilla and chilies and simmer. Add tomatoes and garbanzos and simmer. Drain liquid and reserve, keep chicken mixture warm. In a small sauce pot, add 2 c. liquid, heavy cream, cilantro and cheddar cheese. Heat over medium low heat stirring constantly until well combined. Fill crêpes with chicken mixture and top with cheddar sauce. Serve hot.
