Pomegranate Cider Mimosas

These delicious pomegranate cider mimosas have become my favorite brunch mimosa for autumn. This year, we’ve been blessed with temperatures nice enough for a Sunday brunch al fresco.

Ingredients:
hard cider, pomegranate liqueur, pomegranate juice, pomegranate seeds

Directions:
Pour cider, liqueur, and juice into a glass.Use amounts according to preference. Garnish with fresh pomegranate seeds.

Just add a tasty brunch menu and some great friends…

Cheddar Ale Eggs

Our family’s version of Welsh Rarebit is one of our favorite breakfast dishes. Hubster and Pumpkin enjoy theirs with fried eggs, but I prefer mine with ale poached eggs.Cheddar Ale Eggs

Cheddar Ale Sauce
Ingredients: 1 c. of ale, 2 c. shredded cheddar cheese, 1 Tbsp. prepared brown mustard, 1 tsp. garlic powder, fresh ground sea salt, fresh cracked black pepper

Directions:
Add ale to small sauce pan and bring to a boil. Reduce heat to low and add remaining ingredients. Whisk together until cheese is melted and sauce is smooth.

Cheddar Ale Eggs:
Ingredients: ale poached eggs or fried eggs, English muffins, cheddar ale sauce, turkey ham, smoked paprika

Directions:
Slice turkey ham and pan fry until warm. Prepare eggs to your preference. Toast English muffins. Layer the ingredients and top with the warm cheddar ale sauce. Garnish with smoked paprika.

*Serve with ale breakfast potatoes.

Blame it on the extra sunshine, warm temperatures, and abundance of fresh produce, but I always feel healthiest in the summer months. With school being on summer break, I actually have time to focus on me.

If I even mention the word “healthy”, Hubster cringes and it becomes a challenge to get him to try something. My healthy breakfast options are usually prepared for myself.  Meanwhile, he’s more content eating cereal or bacon, eggs, and potatoes.

Forgive the dark photo, it wasn’t quite bright enough (plus it’s rainy) yet to get a decent photo.

Poached Egg with Bulgur & Bacon Crumbles

Individual Serving:
Ingredients:

1/3 c. boiling hot water, 1/3 c. quick-cooking bulgur, 1-2 eggs, 1 Tbsp. fresh chopped parsley, 2 Tbsp. (turkey) bacon crumbles, fresh ground sea-salt, fresh cracked black pepper

Directions:
Mix together boiling water and bulgur and set aside for at least 30 minutes. Mix in parsley and bacon crumbles. Poach egg and place over bulgur, sprinkle with salt and pepper.

After seeing this gorgeous lace heart pancake floating around on Pinterest, Pumpkin and I decided to try it this weekend. I used my sweet crêpe batter recipe and poured it into a bottle.

Normally I start my 12 Days of Christmas (2010 and 2009) countdown today, but I’m going to be a little behind this year. There’s still a few things I want to share before then.  I was excited to have a house full of people after Thanksgiving to try at least one new brunch recipe on. I tried to follow a recipe I saw in my MIL’s magazine! I had planned to follow the recipe, but I decided to interpret the picture instead.

Poached Eggs with Sautéed Spinach & Maple Gorgonzola Sauce

Poached Eggs with Sautéed Spinach & Maple Gorgonzola Sauce

Ingredients:
1 dozen eggs, 2 shallots, butter, 1 bag of baby spinach, nutmeg, 1/3 c. sweet onion (chopped), 8 oz. block of cream cheese, 1/4 c. gorgonzola cheese, thyme, 1/2 c. heavy cream, 3 Tbsp. pure maple syrup, 1 tsp. fresh thyme, 6 English muffins

Directions: 
Saute butter, spinach, shallots and nutmeg over medium heat until spinach is wilted. Set aside and keep warm. Cook onions until translucent. Add cream cheese, cream, gorgonzola, maple, and thyme and cook until well blended. Toast muffins and poach eggs. Top muffin with egg, spinach and sauce.

Everyone said it was good, or they just fibbed as to not insult me. Either way, I really enjoyed trying something new for my family & friends. I think this would be perfect for a Christmas brunch!

Back to school is the perfect time to play around with quick grab and go options. And breakfast rolls have so many possibilities, it’s difficult to get bored. Any combination of meat, cheese, veggies, and condiments will work. You can prep these ahead of time and refrigerate or freeze. Simply microwave in the morning and enjoy.

Sausage Roll Ingredients:
puff pastry (or other quick baking dough), turkey breakfast sausage, cheddar cheese, Dijon mustard

Ham Roll Ingredients:
puff pastry, turkey ham, swiss cheese, Dijon mustard

Pancake Roll Ingredients:
puff pastry, turkey sausage, maple syrup

Monte Cristo Roll Ingredients:
puff pastry, turkey ham, smoked turkey, swiss cheese, provolone, maple syrup

Apple Roll Ingredients:
puff pastry, apple slices, cheddar cheese

Banana Roll Ingredient:
puff pastry, banana, peanut butter

Bacon & Egg Roll Ingredients:
puff pastry, cooked turkey bacon, scrambled eggs, any cheese or condiment

Berry Roll Ingredients:
puff pastry, red raspberries, dark chocolate chips (just a few)

Breakfast Roll Directions:
Cut the dough into rectangles, layer with condiment, cheese and meat. Roll dough up and press closed. Place seam side down and bake about 375°F for about 10 minutes, or refer to dough directions.

Grilled Pound Cake with Lime Crème Fraîche & Blackberries

The first real breakfast in our house needs to be special… time for my well-known grilled pound cake with crème fraîche and seasonal fruit… mmm…

Grilled Pound Cake with Lime Crème Fraîche and Blackberries

Grilled Pound Cake with Lime Crème Fraîche and Blackberries

Ingredients:
butter rum pound cake, crème fraîche, blackberries, 1 lime

Directions:
Zest the lime into the crème fraîche and set aside. Heat grill pan over medium heat. Use a bread knife to slice the pound cake. Lightly butter each side of cake, place on hot pan and grill for about 30 seconds before flipping. Remove promptly from heat. Spread crème fraîche on one slice of pound cake and top with another slice. Top with additional crème fraîche and blackberries.

Served with faux mimosas (OJ and sparkling apple juice) since Hubster has to get to work.
