After I accidentally made cinnamon extract a few months ago, I’ve been brainstorming new flavors to create. Since Hubster responded so well to the Earl Grey tea, I decided to try it as an extract.
I made a smaller batch in my jar by steeping two bags in vodka for a few days and replacing them with two new bags. Overall, the jar sat for one week, being shook twice a day. It just smells and tastes delicious!
Perfect for desserts, such as chocolate mousse, crème brûlée, shortbread, biscotti or even in cake frosting!
What recipe would you try with Earl Grey tea extract?

what a great idea! i bet it would be good even just in fresh whipped cream, on top of some sort of ice cream. yum!

I recently had a cocktail at the Multnomah Whisky Library (in Portland, OR). I asked the bartender to make something using acqua de cedro. He made a drink that was perfect for spring. Acqua de cedro, bourbon, Earl Gray tea extract and lemon bitters, all shaken and served on ice. Incredibly refreshing.
