I love tortellini, I love them in pasta salad, soup and even baked. I prefer them filled with cheese or spinach or both. Hubster prefers meat in his tortellini.
This time I made it my way… (I needed to… in order to get through the last week of school).
Ingredients:
1 batch of homemade tortellini (or one package), 1 package spinach, 1 small shallot (diced), 2 Tbsp. butter, 1/2 pint heavy cream, 2 large tomatoes, 2 1/2 c. of grated parmesan cheese, 2 c. shredded mozzarella
Directions:
Preheat oven 350°F. Cook tortellini according to package directions. Chop tomatoes and set aside. Chop spinach and wilt. Mix spinach and tomatoes in with tortellini and 1 c. parmesan. Spread evenly into casserole dish. Brown shallot in butter. Add heavy cream and 1 1/2 c. parmesan cheese, stir until thickened. Pour cream sauce over pasta and sprinkle on mozzarella cheese. Bake for 35 minutes. Serve hot with garlic bread or garlic knots.

I was craving it for two days before I caved in and made it…
Here’s how dumb I am: I didn’t know it was possible to make homemade tortellini! This really looks good!
I usually buy the tortellini they sell at Costco, it’s really high quality – and I put my own sun-dried tomato pesto on top. It’s vegetarian (as if I really care!), and verrry delicious. I don’t have the recipe up on my blog yet, but will very soon– in the meantime, I’m going to try yours, since I can’t get it out of my wee little mind!

I had Todd make this today and we used a few things we had around the house instead of your ingredients.
We used a package of cheese tortellini – the kind that is plain, orange, and green, because they pretend they are like veggies, hahaha!
We replaced the spinach with finely chopped broccoli, since we had it. We replace shallots with onion because we had that, too. And Todd added in finely chopped mushroom and minced garlic when he was browning the onion, because we had mushroom and we put garlic into everything that garlic can be put into. =D
And let me tell you, THIS IS DELICIOUS. Thanks for a great way to snazz up some frozen tortellini!
