I like to make a scramble consisting of eggs, peppers, onion, cheese and spinach, and top with sliced avocado.

We really like Smoked Haddock Florentine, and we try and poach the eggs for that, but sometimes we just get antsy and fry them up! Fish and egg sounds odd, but its SO NICE!
