This dish has been a long time autumnal favorite of mine. What better day to make pumpkin waffles then on Halloween?
Ingredients:
1 1/2 c. flour, 1/2 tsp. baking soda, 3 tsp. baking powder, 1 Tbsp. pumpkin pie spice, 2 eggs, 1/4 c. brown sugar, 1 tsp. vanilla extract, 4 tsp. olive oil, 1 2/3 c. milk, 1 c. pumpkin purée.
Directions:
Mix together flour, baking soda, baking powder and pumpkin pie spice. Mix in eggs, brown sugar, vanilla, olive oil, milk, and pumpkin. Add Then pour batter over waffle maker and bake. Top with fresh churned cinnamon ice-cream.
*Serve with fresh apple cider & brunch salad.
*You could also top with fresh churned vanilla ice-cream, whipped butter or whipped cream.
