I don’t normally post more than once per day, but I had a few email requests for my sugar cookie recipe to use as a base for the Fruit Pizza. Sugar cookies are a tasty classic that can be fun to decorate.
Ingredients:
3 c. flour, 1 tsp. baking soda, 1/4 tsp. salt, 1 3/4 c. sugar, 1/4 c. light brown sugar, 1 tsp. almond extract, 1 Tbsp. lemon zest, 1 Tbsp. lemon juice, 1 c. butter (softened), 2 eggs
Directions:
Preheat oven 350ºF. Mix together flour, baking soda and salt. In a separate bowl, use a mixer to cream together butter, sugar, almond extract, lemon zest and lemon juice. Mix in eggs. Slowly add flour mixture. Place spoonfuls on greased baking sheet . Flatten cookies slightly and dust with sanding sugar or sprinkles. Bake 15 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
*Sanding sugar, sprinkles and icing optional for decorating.
