Know what I’ve craved all weekend? Potato Scones! I love having hot “tattie” scones, fried tomatoes, baked beans, eggs, toast and tea for breakfast… and well I only make the fried mushrooms for Pumpkin. No, I’m not pregnant, I just love a traditional Full Scottish Breakfast… well, minus all the meat (Hubster isn’t exactly a fan of Haggis, Lorne or black pudding either).
Well, I decided I had enough eggs yesterday, so I omitted them from my Scottish breakfast today.
Tattie Scone Ingredients:
2 c. mashed potatoes, 3/4 c. flour, 3 Tbsp. butter, 1/2 tsp. salt, cooking spray or canola oil
Tattie Scone Directions:
Turn griddle, set to medium heat. Make sure mashed potatoes are hot and fresh, mix in flour, butter and salt. Dough should start to form a ball. Gently pat out on a floured surface. Dough should be thinned to your liking (I like mine about a 1/4″). Cut a biscuit cutter or knife to cut scones. Place scones on hot griddle and cook about 2 minutes on each side, just until golden brown.
Fried Tomatoes:
Slice tomatoes in half, place in frying pan over medium heat for 4 minutes. Flip tomatoes and fry an additional 3 minutes. Sprinkle with a hint of salt and serve hot.
