Hubster is a meat a potatoes man. As he puts it, I grew up eating, “all that strange stuff.” He never had a pomegranate before I introduced them to him. He never heard of sunchokes, star fruit or hummus before he met me (stables in my childhood home).

My dad and I were discussing my dinner plans this afternoon and he told me that meatloaf was always frowned upon in his house growing up, being a poor man’s dish. I thought about how I never really made meatloaf for Hubster too often, even though he loves it.

So tonight, to honor the good sport of the Meat And Potato Man I love so much, I made him… meat and potatoes. Well, meatloaf, scalloped potatoes and corn. I think it’s a basic meal (and would never make it for myself), he thinks it’s gourmet.

Meatloaf for Hubster

Ingredients:
1 pkg. ground meat, 1 egg, 1/2 c. Italian bread crumbs, 1/2 c. grated Parmesan cheese, 2 Tbs. minced onions, 1 Tbs. mustard seeds, 1 Tbs. parsley, 1/3 c. milk, 1 can tomato sauce

Directions:
Preheat oven to 350°F, spray loaf pan. Stir all ingredients together except tomato sauce. All meat mixture to loaf pan, spreading even. Make a small cut up the middle of the meat. Pour tomato sauce in cut and over all visible meat. Bake for 1 hr and until meat is no longer pink.

*I always use ground turkey for my meatloaf.
